Leftover Sourdough
So you have a few slices of leftover sourdough and you don’t know what to do with them?
First, put them in a bag and throw them in the freezer. When ever you have leftovers that you know will just sit on the counter, add it to the bag.
Once you have a nice full bag that is worth your precious time, take them out and let them defrost on the counter for an hour.
Chop them into smaller pieces and add them to the food processor and let the machine do the hard work of making the most versatile and delicious bread crumbs, fit to be sold to the highest bidder!

Ingredients
- 115g Butter
- 50g Sugar
- 250g Pitted dates
- 1 tsp Vanilla
- 200g Sourdough Bread crumbs (very fine)
- 1/2c Desiccated Coconut
Instructions
Store in an airtight container for 1 week or freeze in ziplock bags for a quick ready to eat snack.
Melt the butter and sugar over medium heat.
Chop dates finely. and add to butter and sugar.
Turn heat to low-medium and keep stirring, make sure it does not burn.
Cook for about 8minutes until dates are soft and mouldable.
Take off the heat and add vanilla and sourdough bread crumbs.
Stir until well mixed.
Let cool slightly.
Prepare a dish with desiccated coconut.
Take a full teaspoon of the sourdough/date mix, mould and roll it in your hand (careful it is hot)
into a nice bite-size ball.
Now roll it into the desiccated coconut and put on a plate to cool completely.
Notes and variations for Healthy sourdough snacks – Date balls with coconut
- Instead of desiccated coconut, melt dark chocolate and coat the balls with chocolate!
- Chop peanuts or almonds supper fine and roll the date balls in the nuts instead of the desiccated coconut.
- Play around with different fruits to add to the dates, like cherries, sultanas or raisins. Just make sure it stays sticky enough to form a ball.
- Increase the protein content by adding a scoop or two of your favourite vanilla protein powder.
- If you do not want to get your hands dirty you can press the mixture tightly into a wax lined tray, wait till cooled but not hardened yet and then slice into bite-sized bars.
