Does making granola intimidate you too?

For some reason granola always intimidated me to try and make it myself. The times I did try it, it was in the oven and usually came out burnt or just with horrible flavour.

For the longest time we would not have granola in the house but when we would visit someone and ate granola and yoghurt for breakfast I was reminded what we where missing in our house. I considered buying again but after the second time I bought it I just couldn’t afford it any more, it is so expensive to buy!!!

So I swallowed my fair of failure, and tried a different method and no recipe really, just ingredients I thought would go well together, and would you know, it was a hit!! Even my one year old baby loves it, even though I have no idea how she chews it as she only has three teeth.

Since, I have tried different ingredients and it never failed! There is just so much variety and freedom once you understand the basics and different components and ratios.

So allow me to share this recipe that I am very proud of to FINALY have conquered!

Base

You will need a base to give volume to your recipe and to build flavour upon. This is ideally dry and also dry roasted to extract the maximum flavour. Examples are:

Spices

Add and adjust to taste. I do recommend starting with very little and add as you feel necessary.

Butter or flavourless oil

Butter is king in my opinion, but I know it sometimes is hard to come by or gets so expensive you just buy when you can’t stand to be without it any more. So here is what I have tested and use.

Sweetener

This is optional and completely up to your personal preference what you use. We love using coconut sugar to cut down on regular sugar consumption. In my experience a combination with a dry sweetener and liquid sweetener works the very best for flavour and texture.

Salt

Does it need any explanation? We use himalayan pink salt, and this batch that I used and photographed was especially pink!

Fruit flavourings

So this is where you can get really creative, or just use what you have on hand. Dried fruit gives a little extra sweetness and flavours your granola to what you like and prefer. Because of the sweetness it does not work to add it earlier with the dry ingredients as it burns too quickly.

Nutrient boosters

You can also add any high nutrient foods that you would like to include in your diet.

How to make the best granola ever with homemade yoghurt
Cook Time 20 minutes
Total Time 20 minutes

Ingredients

  • 2 cups Rolled oats
  • 1 cup Sunflower seeds
  • 1 cup Desiccated coconut
  • 1 cup Butter/Oil
  • 1/4 cup Honey
  • 1/4 cup Coconut sugar
  • 1 tsp Salt
  • 1/2 cup Raisins
  • 1/2 cup Cranberries

Instructions

  1. Put oats, sunflower seeds and desiccated coconut in a heavy bottom pot.
  2. On medium to high heat, roast the mixture until fragrant. Keep stirring. This will take about 10min depending on the size of the pot and the amount you are roasting (I recommend to double what you would expect to eat as your family will certainly take a second helping!).
  3. Once you can smell the oats and seeds/nuts, turn off the heat.
  4. Add your butter or oil, honey, coconut sugar and salt.
  5. Stir until well combined.
  6. Add raisins and cranberries.
  7. Stir until combined.
  8. Scoop out into a wax paper lined dish as it will stick to the bottom of the pot if you leave it in there.
  9. Serve with your favourite yoghurt. We love the combination with our homemade plain yoghurt.

Variations on The Best Granola Ever in only 20min on the stovetop

Go Nuts

Add your favourite nut combination instead of the sunflower seeds. I would recommend roasting them separate from the oats as they are different sizes and will take different times to roast well.

Pecan Peach

Substitute Sunflower seeds with pecans and the raisins and cranberries with dried, cut peaches.

Berries and Cherries

Add a combination of dried strawberries, blueberries and cherries for a berry blast!
